Total Time: 40 minutes
Servings: 4
Ingredients:
Protein
- 1½–2 pounds ground beef or ground turkey
- Sea salt, to taste
- Freshly ground black pepper, to taste
Vegetable Base — Choose 3–4
- Mixed greens, such as romaine, arugula, or spinach
- Roasted sweet potatoes
- Roasted broccoli or cauliflower
- Sautéed mushrooms
- Sliced tomatoes
- Red onion, thinly sliced
Healthy Fats & Toppings
- ½ avocado per serving
- Extra-virgin olive oil, for drizzling
- Sugar-free mustard, homemade mayonnaise, or avocado-based sauce, optional
Optional Flavor Add-Ins
- Garlic powder
- Smoked paprika
- Fresh herbs
Instructions:
- Cook the burgers. Heat a skillet or grill over medium heat. Season the ground beef or turkey with sea salt and black pepper, along with garlic powder or smoked paprika if desired. Form into 4 patties.
- Cook until done. Cook the patties until browned on both sides and cooked through. Ground beef should reach a safe internal temperature of 160°F and ground turkey 165°F. Remove from the heat and allow the burgers to rest briefly.
- Prepare the vegetables. While the burgers cook, roast or sauté any vegetables that aren’t already prepared. Warm previously cooked vegetables as needed.
- Build your bowls. Divide the mixed greens among four bowls. Add a cooked burger patty—either whole, sliced, or crumbled—along with your chosen vegetables.
- Add the healthy fats. Top each bowl with approximately ½ avocado and drizzle with olive oil or your preferred condiment.
- Finish and serve. Add fresh herbs or additional seasoning, if desired, and serve while the burger and roasted vegetables are warm.
Recipe Notes:
- Make it your own: Think of the ingredient list as a framework rather than a rigid formula. Choose three or four vegetables your household enjoys and build from there.
- For a more blood sugar–conscious bowl: Build most of the bowl around protein, non-starchy vegetables, avocado, and olive oil. If you’re adding sweet potatoes, enjoy them alongside the protein, fat, and vegetables rather than making them the majority of the bowl.
- Check your condiments: If avoiding gluten, dairy, or added sugars, read condiment labels carefully since ingredients vary by brand.
- Make it easy for the week: Cook extra burger patties and roast a larger batch of vegetables while you’re already in the kitchen. Store the components separately so they’re easy to mix and match.
- Put those leftovers to work: Extra burgers and vegetables are delicious in lunch salads, Nourish bowls, or savory breakfast bowls.
- Household tip: For family dinner, put the greens, vegetables, avocado, sauces, and other toppings out separately. Everyone can build a bowl that works for them while you’re still preparing just one meal.
- Food safety: Cook ground beef to an internal temperature of 160°F and ground turkey to 165°F.
