Ingredients:
- 1 medium fresh pineapple
- 1 red bell pepper, diced
- 1/4 cup (6 g) fresh cilantro, chopped
- 1 tablespoon fresh mint, chopped
- 1 jalapeño, minced
- Juice of 1 lime
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper, optional
Instructions:
- Cut the top and base from the pineapple. Stand the pineapple upright and carefully remove the peel, cutting away any remaining pineapple “eyes.”
- Cut the pineapple lengthwise into quarters and remove the tough core. Dice the pineapple into small, bite-size pieces.
- Add the diced pineapple to a medium bowl along with the red pepper, cilantro, mint, jalapeño, lime juice, paprika, and optional cayenne pepper.
- Gently toss until everything is evenly combined. Serve immediately or refrigerate until ready to serve.
