Ingredients:
- 4 ripe peaches, halved and pitted
- 1/2 cup almond flour
- 2 tablespoons ground flaxseed
- 1 tablespoon chia seeds
- 1 teaspoon ground cinnamon
- 2 tablespoons unrefined coconut oil, melted
- 1/4 cup raw walnuts, chopped
- 1 tablespoon pure maple syrup, optional, to taste
- 1/4 teaspoon fine sea salt
- 1 cup unsweetened coconut yogurt
- 4 fresh mint leaves, for garnish
Instructions:
- Preheat the oven. Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
- Prepare the peaches. Arrange the peach halves in the baking dish with the cut sides facing up.
- Make the crumble. In a small bowl, combine the almond flour, ground flaxseed, chia seeds, cinnamon, chopped walnuts, and sea salt.
- Add the coconut oil. Pour the melted coconut oil over the dry ingredients. Add the maple syrup, if using, and stir until the mixture is evenly moistened and crumbly.
- Top the peaches. Divide the almond-cinnamon crumble among the peach halves, gently pressing some of the mixture onto each peach.
- Bake. Bake until the peaches are tender and juicy and the crumble is lightly golden, approximately 20–30 minutes. Begin checking the peaches around the 20-minute mark.
- Serve. Let the peaches cool slightly. Spoon the unsweetened coconut yogurt over or alongside the warm peaches and garnish with fresh mint.
Recipe Notes:
Choose ripe but sturdy peaches. Look for peaches with good flavor that give slightly when gently pressed. Very soft peaches can lose their shape more quickly in the oven.
Adjust the sweetness to your fruit. Maple syrup is optional in the original recipe, so let the natural sweetness and ripeness of your peaches guide you.
Watch the peaches rather than only the clock. Peach size and ripeness can affect cooking time. You’re looking for fruit that is tender enough to eat easily with a spoon while still holding its shape.
Serve them warm. The contrast between warm peaches and cool coconut yogurt is one of the best parts of this recipe.
Storage: Store leftovers covered in the refrigerator. For the best texture, keep extra coconut yogurt separate and add it after reheating the peaches.
