Ingredients:
- 6 plain rice cakes, crushed
- ½ cup organic peanut butter
- 1 ripe banana, mashed
- 3 cups mixed frozen berries, thawed
- ⅛ cup honey (or more to taste)
- ½ tablespoon chia seeds
- 8 ounces dark chocolate, melted
Instructions:
- In a large bowl, combine the crushed rice cakes, peanut butter, and mashed banana until the mixture is sticky and holds together.
- Press the mixture evenly into a parchment-lined pan or tray to form the base.
- Add the berries to a small saucepan over medium heat and cook for 5–10 minutes, stirring occasionally, until they break down into a thick sauce.
- Stir in the honey and chia seeds. Simmer for another 2–3 minutes, then remove from the heat and allow the mixture to thicken slightly.
- Spread the berry mixture evenly over the rice cake base.
- Pour the melted dark chocolate over the berry layer and spread evenly.
- Refrigerate for about 1 hour (or freeze for 20–30 minutes) until completely firm.
- Slice or break into bark-sized pieces and enjoy.
Recipe Notes:
- Store in an airtight container in the refrigerator for up to 5 days.
- Variations:
- Swap in your favorite berries like raspberries, blueberries, strawberries, or blackberries.
- Try almond butter or cashew butter instead of peanut butter.
