There’s something about a cold, fizzy drink that feels just right as summer begins to wind down. This Pomegranate Ginger Mule has that refreshing sparkle we crave on warm afternoons, with the deeper color and flavor of pomegranate giving us just a hint that fall is around the corner.
Unlike a traditional mule, this version is alcohol-free and gets its bold flavor from unsweetened pomegranate juice, homemade ginger water, freshly squeezed lime, and sparkling mineral water. It’s tart, gingery, bubbly, and beautifully simple—proof that a special drink doesn’t need a long ingredient list or loads of added sugar.

Cook Time: 15 minutes for ginger water
Total Time: 20 minutes, plus cooling time
Servings: 1
Ingredients:
- 4 ounces unsweetened pomegranate juice
- 1 ounce ginger water
- 1/2 lime, freshly squeezed
- 4 ounces sparkling mineral water
- Lime slice or wedge, for garnish
- Ice, for serving
For the Ginger Water
- 1-inch piece fresh ginger
- 2 cups water
Instructions:
- Make the ginger water: Thinly slice the fresh ginger into coins. Add the ginger and 2 cups water to a small saucepan and bring to a gentle simmer. Simmer for 15 minutes.
- Remove the ginger water from the heat and allow it to cool. Strain out the ginger pieces and refrigerate the ginger water until chilled.
- Fill a copper mug or glass with ice.
- Add 4 ounces unsweetened pomegranate juice, 1 ounce cooled ginger water, and the freshly squeezed juice from half a lime. Stir gently to combine.
- Add 4 ounces sparkling mineral water and give the drink another gentle stir.
- Garnish with a fresh lime slice or wedge and serve immediately.
Recipe Notes:
- Choose unsweetened pomegranate juice: Check the ingredient list and look for pomegranate juice without added sugars or sweeteners.
- Adjust the ginger: Homemade ginger water lets you control the intensity. If you prefer more ginger flavor, add a little more to your drink; for a milder version, use less.
- Make the ginger water ahead: Prepare a batch in advance and refrigerate it so assembling your mule takes only a few minutes.
- Keep the bubbles bubbly: Add the sparkling mineral water last and stir gently so you don’t lose too much carbonation.
- Serving it for a gathering: Make the pomegranate, ginger water, and lime mixture ahead, but wait to add the sparkling mineral water until serving.
- A note on the garnish: The late-summer image includes mint and pomegranate arils for styling. They make beautiful optional garnishes, but they aren’t necessary for the recipe itself.
