I love that there’s no complicated caramel-making involved and no long ingredient list. The warm honey blends with the nut butter to create a rich, naturally sweet coating that gets into all those wonderful nooks and crannies of the popcorn. And while you can sneak a taste while it’s warm, I think it’s especially good once it has had a chance to cool.

Servings: about 8-10 cups

Ingredients:

  • 1/4 cup almond butter or peanut butter
  • 1/2 cup honey
  • 8–10 cups popped popcorn

Instructions:

  1. Read through the instructions before you begin. Once the honey is hot, you’ll want to work quickly.
  2. Place the honey in a small saucepan over high heat and bring it to a boil.
  3. Allow the honey to boil and rise approximately 1 inch in the saucepan, watching it closely. As soon as it rises, remove the pan from the heat.
  4. Immediately add the almond butter or peanut butter. Whisk until completely smooth and pourable.
  5. Place the popped popcorn in a large bowl. Pour the warm honey and nut butter mixture over the popcorn.
  6. Using a large spoon or spatula, gently toss until the popcorn is evenly coated. The mixture will be very hot, so do not mix it with your hands.
  7. Let the caramel popcorn sit until completely cooled. Serve and enjoy.
