A vibrant, tart salsa made from broiled tomatillos, jalapeños, onion, lime juice, and cilantro — perfect for topping eggs, tacos, or grilled meats.

***All of my recipes are gluten-free, dairy-free, blood sugar-friendly, and gut-supportive. We are all different so you may need to make adjustments based on your body’s unique needs.***

Ingredients:

  • 1 pound (450 g) tomatillos, husked and rinsed
  • 1 white onion, cut into large chunks
  • 1 jalapeño, roughly chopped
  • Juice of 1 lime
  • ½ cup (12 g) fresh cilantro
  • Salt to taste

Instructions:

  1. Preheat oven broiler and line a sheet pan with aluminum foil.
  2. Cut tomatillos in half and place tomatillos and onion chunks on the pan. Broil for 5–7 minutes, or until slightly charred.
  3. Transfer charred tomatillos and onions to a food processor. Add jalapeño, lime juice, cilantro, and salt.
  4. Pulse until salsa reaches desired consistency. Add a splash of water if it’s too thick.

Recipe Notes:

  1. For extra flavor, add a garlic clove or a dash of chipotle powder.
  2. This salsa keeps well in the fridge for up to 5 days.
  3. Try it over eggs, grilled meats, tacos, or even mixed into a simple grain bowl.
