A golden-brown whole chicken in a slow cooker, surrounded by softened chopped onions.

This whole chicken recipe is seasoned with pantry spices and slow-cooked over onions until fall-apart tender. A perfect family dinner and ideal for meal prep.

***All of my recipes are gluten-free, dairy-free, blood sugar-friendly, and gut-supportive. We are all different so you may need to make adjustments based on your body’s unique needs.***

Ingredients:

  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne (red) pepper
  • ¼ teaspoon black pepper
  • 1 large onion, chopped
  • 1 large whole chicken

Instructions:

  1. Combine the dried spices in a small bowl.
  2. Place the chopped onion in the bottom of the slow cooker.
  3. Remove any giblets from the chicken and rub the spice mixture all over the chicken. You can even put some of the spices inside the cavity and under the skin.
  4. Place the prepared chicken breast side up on top of the onions. Cover and turn to high. No added liquid is needed.
  5. Cook for 4–5 hours (for a 3- to 4-pound chicken), or until the chicken is falling off the bone.

Recipe Notes:

  1. You can cook this on low for 6–8 hours instead if needed.
  2. Save the bones to make your own homemade chicken stock.
