When mornings get busy, this Vanilla Chia Pudding saves the day. It’s rich in omega-3s, fiber, and healthy fats — everything your body needs for balanced energy and stable blood sugar.
Chia seeds absorb the dairy-free milk overnight, creating a pudding-like texture naturally — no sugar, no thickener, no effort.
***All of my recipes are gluten-free, dairy-free, blood sugar-friendly, and gut-supportive. We are all different so you may need to make adjustments based on your body’s unique needs.***
Ingredients:
- 3 tablespoons chia seeds
- 1 cup unsweetened almond milk (or other dairy-free milk)
- ½ teaspoon vanilla extract
- Pinch of sea salt
- Optional toppings: fresh berries, coconut flakes, nuts
Instructions:
- Mix chia seeds, milk, vanilla, and salt in a jar.
- Stir well, cover, and refrigerate overnight.
- In the morning, stir again and add toppings.
