This light and tangy citrus vinaigrette adds the perfect brightness to any salad. With fresh-squeezed juice and just a touch of sweetness, it’s made to nourish your gut and balance your blood sugar—without sacrificing flavor.
***All of my recipes are gluten-free, dairy-free, blood sugar-friendly, and gut-supportive. We are all different so you may need to make adjustments based on your body’s unique needs.***
Ingredients:
- 6 Tbsp fresh-squeezed orange juice
- ¼ cup fresh lemon juice
- 1 tsp raw honey (or pure maple syrup)
- 1 Tbsp Dijon mustard
- 6 Tbsp extra-virgin olive oil
Instructions:
- In a medium bowl, whisk together the orange juice, lemon juice, and honey.
- Stir in Dijon mustard until well combined.
- Slowly add olive oil while whisking to emulsify.
- Store in the fridge in a covered container. If it thickens, allow to sit at room temperature for 30 minutes before serving.
Recipe Notes:
- This vinaigrette pairs beautifully with spinach, berries, and grilled chicken.
- To make vegan, use maple syrup in place of honey.
