***All of my recipes are gluten-free, dairy-free, blood sugar-friendly, and gut-supportive. We are all different so you may need to make adjustments based on your body’s unique needs.***
Ingredients:
- 1 cup unsweetened almond milk (or oat, coconut, or cashew milk)
- 2 tbsp pumpkin puree
- 1–2 tbsp maple syrup (to taste)
- 1/2 tsp pumpkin pie spice (or cinnamon + nutmeg + ginger mix)
- 1/4 tsp vanilla extract
- 1/2 cup strong brewed decaf coffee
- Pinch of sea salt
Instructions:
- In a small saucepan, warm the almond milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla, and sea salt over medium heat. Whisk until smooth and steaming (but not boiling).
- Pour the hot mixture into a blender and blend for 20–30 seconds until frothy. (Or use a handheld frother directly in the saucepan.)
- Pour brewed coffee or espresso into a mug, then top with the pumpkin milk mixture.
- Garnish with coconut whipped cream and a sprinkle of cinnamon, if desired.
- Sip, savor, and enjoy the cozy fall flavors!
Recipe Notes:
- Swap with roasted chicory tea for a caffeine-free tea version.
- Adjust sweetness to your preference—maple syrup adds minerals and depth.
- Add a scoop of collagen peptides for extra gut and skin support.
