A one-pan Mediterranean Turkey & Rice Skillet packed with flavor, gut-loving veggies, and blood sugar-friendly balance.
***All of my recipes are gluten-free, dairy-free, blood sugar-friendly, and gut-supportive. We are all different so you may need to make adjustments based on your body’s unique needs.***
Ingredients:
- 1 pound ground turkey
- 2 teaspoons minced garlic
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon dried oregano
- ½ cup chopped sun-dried tomatoes (drained and roughly chopped)
- 2 cups wild rice
- 4 cups chicken broth
- 5 ounces baby spinach
- ½ lemon, zested and juiced
Instructions:
- In a large skillet, over medium-high heat cook ground turkey, onion, garlic, salt, pepper, and oregano. Cook until the turkey is browned.
- Stir in sun-dried tomatoes, rice, and chicken broth. Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 45 minutes, or until rice is tender and most of the liquid is absorbed.
- Uncover and stir in spinach, lemon zest, and lemon juice. Cook just until spinach wilts—about 1–2 minutes.
- Taste and adjust seasoning if needed. Serve warm.
