A one-pan Mediterranean Turkey & Rice Skillet packed with flavor, gut-loving veggies, and blood sugar-friendly balance.

***All of my recipes are gluten-free, dairy-free, blood sugar-friendly, and gut-supportive. We are all different so you may need to make adjustments based on your body’s unique needs.***

Ingredients:

  • 1 pound ground turkey
  • 2 teaspoons minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried oregano
  • ½ cup chopped sun-dried tomatoes (drained and roughly chopped)
  • 2 cups wild rice 
  • 4 cups chicken broth 
  • 5 ounces baby spinach
  • ½ lemon, zested and juiced

Instructions:

  1. In a large skillet, over medium-high heat cook ground turkey, onion, garlic, salt, pepper, and oregano. Cook until the turkey is browned. 
  2. Stir in sun-dried tomatoes, rice, and chicken broth. Bring the mixture to a boil.
  3. Reduce heat to low, cover, and simmer for 45 minutes, or until rice is tender and most of the liquid is absorbed.
  4. Uncover and stir in spinach, lemon zest, and lemon juice. Cook just until spinach wilts—about 1–2 minutes.
  5. Taste and adjust seasoning if needed. Serve warm.
